Oatmeal Raisin Muffins

These oatmeal raisin muffins are the perfect breakfast or after-school snack. They're nutritious and delicious!

Ingredients
  

  • 1 c. quick oats
  • 1 c. self-rising flour
  • 1/4 c. brown sugar
  • 1/4 c. white sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. milk
  • 1 egg
  • 1/2 c. applesauce
  • 1/2 tsp. maple extract
  • 1/2 c. raisins

Instructions
 

  • Preheat oven to 375 degrees.
  • Sift flour into a large bowl. Mix in quick oats, brown sugar, white sugar, cinnamon and nutmeg.
  • In a separate bowl, beat the egg, and mix in milk, applesauce and maple extract.
  • Combine the wet and dry ingredients, and then add the raisins. Do not over-mix.
  • Pour batter into greased muffin tins.
  • Bake at 375 degrees for 18-20 minutes.
