Enjoy one of your favorite comfort foods without the carbs. These low carb meatloaf muffins are full of flavor!

Ingredients
  

Meatloaf

  • 1 lb. ground beef
  • 1 lb. ground turkey
  • 4 oz. mozzarella cheese
  • 1/3 c. tomato sauce
  • 2 eggs
  • 1 clove garlic minced
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp chili powder
  • 1/2 tsp. parsley
  • 1/2 tsp. basil
  • 1 tsp. salt
  • 1/2 tsp. pepper

Topping:

  • 1/4 c. tomato sauce
  • 1/4 tsp. molasses
  • 1 1/2 tsp. Splenda

Instructions
 

  • In a a large bowl, mix all the meatloaf ingredients together.
  • Mix the topping ingredients in a small bowl..
  • Place the meat mixture in muffin tins that have been sprayed with Pam.
  • Brush with topping.
  • Bake at 375 for 30 minutes.
