Cook bacon using your preferred cooking method. Let cool, and then crumble the pieces. Set aside half.
Combine half the bacon and the rest of the ingredients in a medium bowl. Cover with a lid and place in the refrigerator for about 24 hours to let the flavors come together.
When ready to serve, remove the pickle dip from the fridge, stir it up, and top with the remaining bacon and an additional tablespoon or so of green onions.
Serve with fresh veggies, crackers, chips, or pita.
