Banana Pancakes with Peanut Butter Sauce

Delicious banana pancakes are topped with banana slices and peanut butter sauce for a sweet, filling breakfast.

self-rising flour

white sugar

tsp.
baking powder
1
very ripe banana
1
tsp.
vanilla
1 1/4
c.
milk
1
egg
beaten

tbsp.
vegetable oil
pinch
of cinnamon
Peanut Butter Sauce
1/2
c.
peanut butter
1/2
c.
white sugar
3/4
c.
water
Instructions
Pancakes
Combine dry ingredients in a medium mixing bowl.
Add banana and wet ingredients to a large zipper bag or bowl, mashing and mixing until all ingredients are combined.
Combine banana mixture and flour mixture. It will be lumpy and somewhat thick.
Pour 1/4 c. batter into the pan for each pancake.
Heat until bubbly on top, flip and cook until golden brown on each side.
Peanut Butter Sauce
Combine all ingredients in a small saucepan. Heat until boiling. Let cool slightly, and drizzle over pancakes.
Notes
Top pancakes with bananas and peanut butter sauce or maple syrup (or both)!
