Ingredients
2
pounds
boneless pork shoulder
trimmed and cut into 4 large pieces
2
teaspoons
kosher salt
black pepper
to taste
6
cloves
garlic
minced
1
packet Sazon seasoning
1/4
teaspoon
dry oregano
1
cup
reduced sodium chicken broth
2
bay leaves
Instructions
Cut pork shoulder into 4-5 large chunks to fit it into the Instant Pot.
Add salt, pepper, Sazon seasoning, dried oregano and minced garlic to chicken broth. Pour over pork.
Add bay leaves.
Cover, and cook the pork on high pressure (using manual setting) for 50 minutes.
Naturally release pressure for 10 minutes.
Shred meat with forks.
Serve in lettuce cups and top with cheese, sour cream, veggies or other preferred toppings.
Notes
You should not need to drain the pork after cooking. If any liquid remains, it will be soaked up by the meat after you shred it.
