This Low Carb Texas Hash is a healthier take on the original that substitutes ground turkey for ground beef and cauliflower for the rice. But don't worry - you won't be sacrificing flavor. It's still a winner of a meal that the entire family will love!

Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 bell pepper diced
  • 1 medium yellow onion diced
  • 1 lb. ground turkey
  • 1 15 oz. can diced tomatoes
  • 1 10 oz. bag riced cauliflower
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup. shredded sharp cheddar cheese divided

Instructions
 

Directions:

  • Preheat oven to 350. Meanwhile, heat oil in skillet. Saute peppers and onions until tender.
  • Add ground turkey, and cook until browned.
  • Add tomatoes, cauliflower rice, chili powder, salt, pepper and 3/4 cup cheddar cheese. Heat through.
  • Pour mixture into an 8x8 or 9x9 pan and top with remaining cheddar cheese. Bake at 350 degrees for 10-15 minutes, until cheese on top is melted and slightly brown.
