1cupuncooked white riceyou can substitute brown rice, but the cooking time will change
2Tbsp.butter or margarine
1/2cupchopped onion
2cupschicken or beef broth
1/4tsp.dried thyme leaves
1/8tsp.ground black pepper
1-1/2cupssliced mushrooms
Instructions
Pre-heat oven to 350 degree F.
Place rice into shallow 2- to 3-quart baking dish.
Melt butter in 2-quart saucepan over medium-high heat. Add onion; cook and stir 3-5 minutes until onion is tender. Add mushrooms and cook 1 - 2 more minutes. Add broth, thyme and pepper. Bring to a boil; pour over rice.
Cover and cook for 30 minutes or until rice is done.
