Italian sausage links
hot or sweet, or a mixture, quartered
1 14.5

can of diced tomatoes
1 8-
oz
can tomato sauce
1
cup
medium-sized red bell pepper
chopped
1
cup
medium-sized green bell pepper
chopped

cup
medium onion cut in thin wedges
Salt and pepper to taste

Ricotta cheese

eggs
1/2
cup
Parmesan cheese

Fresh spinach
3/4
cup
mozzarella cheese
shredded
Instructions
Preheat oven to 375°F
Cook the sausage as directed.
Add diced tomatoes, tomato sauce, peppers and onion and simmer until vegetables are cooked.
Add salt and pepper.
In a bowl whisk together the Ricotta cheese and eggs until smooth.
Stir in Parmesan cheese and spinach.
Fill casserole dish layering sauce from meat, spinach mixture, meat & sauce, etc.
Add mozzarella cheese on top.
Bake till heated through, approximately 30 minutes.
