Oatmeal Raisin Muffins

These oatmeal raisin muffins are the perfect breakfast or after-school snack. They're nutritious and delicious!

quick oats

c.
self-rising flour
1/4
c.
brown sugar
1/4
c.
white sugar

tsp.
cinnamon
1/4
tsp.
nutmeg
1
c.
milk
1
egg
1/2
c.
applesauce
1/2
tsp.
maple extract
1/2
c.
raisins
Instructions
Preheat oven to 375 degrees.
Sift flour into a large bowl. Mix in quick oats, brown sugar, white sugar, cinnamon and nutmeg.
In a separate bowl, beat the egg, and mix in milk, applesauce and maple extract.
Combine the wet and dry ingredients, and then add the raisins. Do not over-mix.
Pour batter into greased muffin tins.
Bake at 375 degrees for 18-20 minutes.
