chicken broth

olive oil

medium yellow onion
chopped

large carrot
finely chopped

cloves
garlic
minced

oregano

thyme

ground cumin

tsp.
cayenne pepper
salt and pepper to taste
sour cream
optional
shredded cheese
optional
Instructions
Saute onions, carrot and garlic in olive oil over medium heat until onions are translucent.
Add beans, broth and dry spices. Stir together.
Reduce heat to medium low and simmer for 30 minutes, stirring occasionally.
Add salt and pepper to taste.
Top with sour cream or cheddar cheese, if desired.
