Banana Pancakes with Peanut Butter Sauce

I love pancakes. I’ve not yet met a version that I didn’t like, but banana pancakes are my absolute favorite. These pancakes are packed with banana flavor, topped with bananas and drizzled with peanut butter sauce. Yum! Here’s how to make them yourself. I recommend you do it immediately. Your tummy will thank you.

Here’s everything you need. I think. I’m terrible about the ingredients pictures

For the pancakes:

  • 1 3/4 c. self-rising flour (if using all-purpose flour, add 1/2 tsp. salt)
  • 2 tbsp. sugar
  • 2 tsp. baking powder
  • 1 very ripe banana
  • 1 tsp. vanilla extract
  • 1 1/4 c. milk
  • 1 egg
  • 2 tbsp. vegetable oil
  • pinch of cinnamon

To start, combine your flour, sugar, baking powder and cinnamon in a large mixing bowl. Sift the flour first to make them extra fluffy!

Now, combine all the liquids and the mashed banana. You could do this in a bowl, but I find it easier to mix and mash everything in a large baggie instead.

Clip a hole in one edge of the baggie and squeeze it into the flour mixture. Stir until combined. It will be lumpy and a little thick.

Heat a nonstick pan over medium heat. Pour pancake batter into the pan, using 1/4 c. for each pancake. Wait until the top is bubbly, flip and cook until golden brown on each side.

For the peanut butter sauce:

Ingredients:

  • 1/2 c. peanut butter
  • 1/2 c. sugar
  • 3/4 c. water

The peanut butter sauce is super simple. Just add all the ingredients to a small saucepan and cook until boiling. Pour over pancakes while the mixture is still thin. It thickens as it cools, as you can see in the first picture in this post. It was a little too thick to drizzle by that point.

Banana Pancakes with Peanut Butter Sauce

Ingredients
  

Pancakes

  • 1 3/4 c. self-rising flour
  • 2 tbsp. white sugar
  • 2 tsp. baking powder
  • 1 very ripe banana
  • 1 tsp. vanilla
  • 1 1/4 c. milk
  • 1 egg beaten
  • 2 tbsp. vegetable oil
  • pinch of cinnamon

Peanut Butter Sauce

  • 1/2 c. peanut butter
  • 1/2 c. white sugar
  • 3/4 c. water

Instructions
 

Pancakes

  • Combine dry ingredients in a medium mixing bowl.
  • Add banana and wet ingredients to a large zipper bag or bowl, mashing and mixing until all ingredients are combined.
  • Combine banana mixture and flour mixture. It will be lumpy and somewhat thick.
  • Pour 1/4 c. batter into the pan for each pancake.
  • Heat until bubbly on top, flip and cook until golden brown on each side.

Peanut Butter Sauce

  • Combine all ingredients in a small saucepan. Heat until boiling. Let cool slightly, and drizzle over pancakes.
