Since being diagnosed as diabetic, I’ve been looking for lower carb, protein-packed snacks to keep my hunger at bay and fuel my body better. While it’s easy to get lots of protein from your meat, veggies, and legumes, it’s not always an option when it comes to desserts. In fact, most desserts (even keto or low carb sweets) are typically empty calories that do nothing for you. But that’s not the case with protein pudding.
Made with just 3 ingredients — Naked PB’s chocolate peanut butter powder, a vanilla protein shake, and sugar-free pudding mix — this dessert really hits the spot. Half of a serving is incredibly filling and will satisfy your cravings for something sweet. Pair it with fresh fruit like sweet raspberries or fresh sliced bananas, and you have a well-rounded snack with plenty of protein and fiber.

Ingredients

- Chocolate Naked PB — This chocolate-flavored peanut butter powder is going to make your protein pudding taste like a Reese cup! Naked Nutrition’s motto is “Nutrition with Nothing to Hide,” so you know you’re getting quality ingredients. Each serving contains 6 grams of protein for only 60 calories and 5 total carbs. They have lots of other protein powders to choose from as well as products like brownie mix and pancake mix.
- Vanilla Protein Shake — Any brand will do. You’ll need 11 ounces. Make sure it’s a prepared protein shake. Unfortunately, mixing your own protein powder in water or milk won’t work, as the pudding never sets up.
- Sugar Free Pudding Mix — You can use any flavor you want, but I personally like the white chocolate or cheesecake flavors best. If you’re watching your carbs and/or calories, make sure it’s the sugar-free pudding mix instead of the regular kind.
Equipment Needed
To make your 3-ingredient protein pudding, grab a small mixing bowl and a whisk. That’s it! It’s super easy. If you don’t want to whisk it, you can use an electric hand mixer instead.
How to Make Protein Pudding
This section provides a brief overview of the instructions but the steps are not detailed. For exact step-by-step instructions, refer to the recipe card below.
Step 1: Add your protein shake to a small mixing bowl.
Step 2: Add one scoop of chocolate Naked PB.
Step 3: Add 2 tablespoons of instant sugar-free pudding mix. Make sure it’s instant or it won’t set up properly.
Step 4: Whisk all the ingredients together for two minutes or until thickened.
Step 5: Let your pudding set up for at least 5 minutes in fridge. I prefer about half an hour of chilling time for a more custard-like texture.
Storing Leftovers
Store leftover protein pudding in an airtight container in the fridge for up to 3 days. I do not recommend freezing it, since that will change the texture.
Tips and Tricks
- Add a little more sugar-free pudding mix for a thicker pudding or a little less for a thinner version.
- Use an electric mixer for a fluffier version or to smooth things out if your protein pudding is a little lumpy.
- Experiment with different flavor combinations to find the one you like best!
Additions and Variations
Make it sweeter. Want an even sweeter version? Top it with sugar-free chocolate chips, unsweetened coconut flakes, or a drizzle of sugar-free caramel topping.
Top with nuts. Add a little crunch to this smooth, thick pudding by topping it with crushed walnuts or almonds.
Serve with fresh fruit. Sliced strawberries or bananas are fabulous with protein pudding. You can also slice and apple and dip it right in. Delish!
Protein Pudding FAQ
Do I have to use a protein shake? Can I use whey protein powder and milk instead?
I haven’t had much luck with using the whey protein powder and milk or water. I get the best results when using a prepared protein shake. Plus, it makes the recipe that much easier.
Can I use a different flavor of pudding?
Yes! You can use vanilla, cheesecake, chocolate, or butterscotch. All of those choices would be fantastic with the chocolate peanut butter powder.

Ingredients
- 11 oz vanilla protein shake
- 1 scoop chocolate Naked PB
- 2 tbsp sugar free white chocolate pudding mix
Instructions
- Add the vanilla protein shake to a small mixing bowl.
- Add 1 scoop of chocolate-flavored Naked PB.
- Add 2 tablespoons of sugar-free white chocolate pudding.
- Whisk ingredients together for 2 minutes until slightly thickened.
- Refrigerate for 5 minutes for soft-set pudding or about 30 minutes for a thicker set pudding.
