This cauliflower and ground beef hash is an easy low carb dinner that you can fit in any night of the week. And, boy, does it fill you up!
When my husband is low carbing, easy go-to meals are a must for those days when you’re just too busy to fuss over dinner. This is one of those meals. It’s a no-fuss dish made with ground beef, cauliflower and lots of ooey gooey cheddar cheese. But the good thing is that you can dress it up or down depending on what you have in your pantry and fridge.
Toss in some jalapenos to spice it up. Add bacon, sour cream and green onions, and it’s a lot like a loaded baked potato (without all those bad carbs).

This cauliflower and ground beef hash will be your favorite go-to low carb dinner. It's easy, cheesy and ready for the dinner table in about 20 minutes!
And there you go! You can have this on the table in about 20 minutes, and even kids seem to like this dish. If you’d like smaller chunks of cauliflower, just pop it in the food processor for a spin or two. Serve it alongside a nice big salad to round out the meal.

Easy, delicious and healthier weekday dinner! Used cauliflower rice instead of florets and ground turkey instead of beef. I did add a little chopped onion and frozen broccoli florets that I had left over as well as about 1/3 cup heavy cream (weโre keto). So good!!

This was spectacular! I used ground venison because I have a ton of it in my freezer and added sour cream and bacon bits. Just like a loaded baked potato! Thank you for sharing!

Hello. Iโve made this one other time but donโt remember what I did. If using frozen riced cauliflower, does it need cooked first or does it cook fully since the instructions say stir until tender?

When I use the frozen riced cauliflower, I just toss is in there frozen after the beef is drained and heat it through. I do let it sit out while I cook the beef and break apart any big chunks by mashing the bag in my hands before adding it, though. Hope that helps!

You noted to add bacon, sour cream and green onions to make it taste like a loaded baked potato. Do you add these items to the beef mixture or just on top when serving.
